Ingredients

  • 500 g Cream cheese
  • 200 ml Heavy cream
  • 4 Large eggs
  • 2 tsp Vanilla extract (gluten-free)
  • 200 g Erythritol Sweetener (or another sugar substitute)
  • 1 tbsp Corn flour
Makes:  9inch round

Instructions
 

  • Preheat your oven to oven fan200 °C.
  • In a large bowl, combine 500 g Cream cheese and 200 g Erythritol Sweetener.
    Beat until smooth.
    Add 4 Large eggs one at a time, mixing well after each addition.
    Stir in 2 tsp Vanilla extract.
  • Gradually add 200 ml Heavy cream, then fold in the 1 tbsp Corn flour until just combined.
  • Line a 9-inch springform pan with parchment paper, ensuring the paper comes up higher than the sides of the pan.
  • Pour the batter into the prepared pan.
  • Bake for 40-45 minutes or until the top is deeply caramelized and the cheesecake is set but still jiggly in the center.
  • Let the cheesecake cool at room temperature, then transfer to a large serving plate and chill in the refrigerator for at least 4 hours.
  • Serve chilled.
