Ingredients

  • 300 g Bananas (ripe, mashed)
  • 225 g Almond flour
  • 3 Large egg
  • 60 ml Maple syrup
  • 5 ml Vanilla extract
  • 5 g Baking soda
  • ½ tsp Salt
  • ½ tsp Cinnamon powder (optional)
  • 60 g Walnuts (chopped, optional)

Instructions
 

  • Preheat your oven to 180 °C.
  • Grease and line a 9×5 inch loaf pan with parchment paper.
  • In a large bowl, mash the 300 g Bananas.
    Add 3 Large egg, 60 ml Maple syrup, and 5 ml Vanilla extract, and mix well.
  • In a separate bowl, whisk together the 225 g Almond flour, 5 g Baking soda, 1/2 tsp Salt, and 1/2 tsp Cinnamon powder.
  • Gradually add the dry ingredients into the wet mixture and stir until just combined.
    Fold in 60 g Walnuts if using.
  • Pour the batter into the prepared pan.
  • Bake for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Vegan Option: Substitute eggs with flax eggs (1 flax egg = 1 tbsp flaxseed meal + 2.5 tbsp water).
